UNAGI (BROILED EEL) + QUINOA + EGG = UNAQUILOG or UNAQUISILOG

A quinoa based hack on the filipino breakfast “bangsilog” —- substituting quinoa for rice, and bbq eel for the fried bangus/milkfish.

I wasn’t feeling well today. And I couldn’t think of anything I wanted for breakfast. Until I searched my tummy mind and realized I wanted bangsilog. So I yelped Bangsilog in Berkeley and there is nothing nearby. 

I had no rice or bangus/milkfish in the house, but I did have the following ingredients: frozen bbq eel filet, eggs, quinoa, garlic green onions, tomato, sweet and sour sauce, agave and korean bbq sauce.

 

I broiled the unagi in the toaster oven, browned the garlic and fried the steamed quinoa. I threw the eel in the frying pan to sear both sides bc I like it crunchy, then took the eel sauce in the pan, added agave, kbbq sauce, sweet n sour and reduced it to drizzle over the grilled unagi. all is topped with sea salt and green onions, with sunny side up eggs and chopped tomatoes.
